VEGAN QUESADILLAS

Ingredients

  • 1 Avocado pitted
  • 5-10 tortilla wraps (depending on size)
  • 1/2 salsa
  • 1 cup of chopped romain lettuce
  • 1 cup of black beans (rinsed well)

Instructions:

  1. Rinse the black beans
  2. Wash lettuce
  3. chop the lettuce into small pieces
  4. Add beans, lettuce, avocado and salsa to processor
  5. Blend
  6. Place the mixture on half of the tortilla and fold
  7. Warm until just crisp on both sides
  8. ENJOY!
